Caprse Grilled Cheese
Ingredients
- 8 slices of sourdough bread
- 1/4 cup basil pesto
- 8 oz of mozzarella cheese, cut into 1/4-inch thick slices
- 2 large tomatores, cut into 1/4 inch slices
- 2 tablespoons of olive oil
Instructions
- Heat a large skillet of flat top griddle over medium
heat. Preheat oven to 250F
- Spread the pested on one side of each bread. Layer
the mozerrella over 4 slices. Top with tomoatoes
Top with remaining bread, pesto side down
- Brush olive oil on the outside of sandwhiches,
place on griddle, cook until bottom is toasted
- Use a spatula to smush the sandwhichs, then flip
and toast the other side
- Place the sandwiches on baking sheet and transfer
to oven. Bake until cheese is melted, about 5-7 minutes
