Marry Me Chickpeas
Ingredients
- 1 tbsp olive oil
- 1 yellow onion
- 3 clove garlic
- 1 1/2 tbsp tomato paste
- 1/2 cup sundried tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp chili powder
- 1 tsp salt
- 3/4 cup vegetable broth
- 1 cup coconut milk
- 2 cans canned chickpeas
- 1 handful spinach or basil
Instructions
- In a pan over medium heat, add the oil, onion and garlic. Sauted until fragrant, approximately 5 minutes
- Next add the sundried tomatoes, tomato paste, and Italian seasonsing, chili powder, and salt. Saute until fragrant, approximately 3 minutes
- Add the vegetable broth and coconut milk and stir until a suace is formed. Stir in the chick peas and cover and cook for an additional 3 minutes
- Finish with a handful of fresh spinach or basic and serve with rice, bread or pasta
