Pumpkin Orzo with Chicken Sausage
Ingredients
- 1 Tsp extra-virgin olive oil
- 12 oz of chicken sausage
- 2 cloves garlic
- 2 cup of orzo
- 1/2 cup of dry white wine
- 2 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup pumpkin puree
- 1 tsp of dry sage
- 1 tsp dry thyme
- 1 pinch of cayenne pepper
- 1/2 cup shredded Gruyere, plus more for serving
Instructions
- In a large skillet heat oil. Add sausage and cook, until golden brown. Transfer to plate
- In the same skillet cook onion about 7 minutes. Add garlic and cook until fragrant. Add orzo and cook
until toasted, about 2 minutes. Add wine, reduce heat to medium, and simmer, stirring until liquid
is evaported.
- Add broth, cream, pumpkin sage, thyme, and cayenne. Season with salt and black pepper.
Bring to a simmer then reduce heat to low. Cook, until orzo is done, about 10 minutes
- Return sausage to skillet. Stir in cheese until melted and combined. Season with more salt
and pepper.
