Tagliatelle in One Pan
Ingredients
- 200 grams tagliatelle pasta
- 10 cherry tomatoes
- 1 purple onion, sliced
- 1 tablespoon tomato paste
- 5 tablespoons olive oil
- 1 handful spinach
- 2 cloves garlic
- 1 teaspoon thyme (or Italian spice blend)
- 1 can coconut cream
- 2 cups chicken broth or hot water
- Salt
- Parmesan cheese, for serving (optional)
Instructions
- Layer the pasta, cherry tomatoes, onion, spinach, and garlic in a large pan
- Drizzle with olive oil
- Add the tomato paste, Italian spices, cream, and broth or boiling water
- Cover and cook over medium heat for about 15 minutes, stirring occasionally
- If it becomes too dry, add a little more water
- Sprinkle with Parmesan cheese if desired and serve hot
